Apples, apples everywhere!

Apples, apples everywhere!

Today is ‘Apple Day’, a celebration of all things orchardy and appley. And why not…they’re everywhere – in gardens, parks and piled high in greengrocers. But when they are in such abundance, it can be hard to find enough recipes that really make the most of these delicious fruits.

There’s plump pies and crumbles of course but what if you want an apple desert that’s not quite so filling? Look no further, here’s an autumn treat – an apple frozen yoghurt with blackberry sauce.

Apple Frozen Yoghurt with Blackberry Sauce

A Taste of Autumn

(Makes 1kg)

200ml of Apples

550ml of Greek yoghurt

80ml of whole milk

20ml of water

100g of sugar

Lemon juice to taste

150g of Blackberries

20ml of water

Sugar to taste.

Peel and core your apples and chop them into slices.  Pop them in a pan with the water and sugar and cook until soft. Blitz with a hand blender to form a puree.  Allow to cool and add to the frozen yoghurt and milk. Add you lemon juice to taste – make sure you use slightly more than you think you need, because once things are frozen, their flavour is subtler. If you have an ice cream maker, put the mixture into churn, then freeze until you have a soft scoop consistency. Alternatively add the mixture straight into a container and put in your freezer for about four hours.

Blackberries are packed with vitamins A & C

Put the blackberries, water and a sprinkle of sugar to taste in a saucepan and cook the blackberries until softened.  Blitz with a hand blender, allow to cool and pour all over your apple frozen yoghurt.

Fruity, low in sugar and delicious! Happy Apple Day!
