During Wimbledon its practically the law to eat strawberries and cream as often as humanly possible. And Strawberries and ice cream..and strawberries and meringues..
If you are looking for a healthier alternative to give your family this Wimbledon, look no further! Here’s a delicious Strawberry frozen yoghurt recipe packed with creamy Greek style yoghurt, whole milk and loads of ripe, juicy strawberries. A 100ml serving weighs in at around 100 calories – almost a third of the calories you find in ice cream.
200g of Ripe Strawberries
550ML YOGHURT – full fat Greek style
140ML WHOLE MILK
6-8 ML LEMON JUICE
Start by chopping a handful of Strawberries – you’ll use these slices later to add colour and texture to your frozen yoghurt.
Blend the rest of the Strawberries using a hand blender until you have a puree.
Add the sugar to the puree and gently heat until all the sugar has dissolved. Set to one side to cool. Mix the yoghurt and milk together and (once cooled) add the strawberries.
Once your mixture is completely stirred, add your Strawberry chunks and lemon juice. Top Tip – use slightly more lemon juice than you think – when things are frozen the flavours are not as strong, so you need this acidity to bring out the flavour of the Strawberries.
At this stage, you can either pop the mixture into an ice cream maker or just transfer it straight into a container and freeze. If you plan on eating this on the same day, just freeze it until it has a scoop-able consistency. If you plan on eating it another day altogether, make sure you take the container out in plenty of time to allow it to soften.
